This is a great salad that's nutritionally packed for the whole family. I allow everyone to choose their own dressing. I made the tahini dressing from the Mediterranean salad. My youngest daughter decided to water down store bought hummus with lemon juice and a little water for hers. My oldest had friends over and they all opted for bbq sauce. 

Serves 6

2 medium heads of organic romaine lettuce chopped in very thin slices

1 container of extra firm organic tofu chopped into small squares

1 1/2 cups frozen organic corn

1 can of chickpeas drained and rinsed

1 medium organic orange bell pepper chopped

1 organic cucumber chopped

1/2 package of cherry tomatoes sliced in half

2-3 cups cooked brown rice

In a large bowl mix the romaine, chickpeas, orange bell peppers, cucumbers and cherry tomatoes. Heat a cast iron pan on medium to high heat and lightly oil with avocado oil. Add the chopped tofu pieces and cook until it's just warm about 2 minutes. Set aside in a bowl. Add the frozen corn to the pan and stir fry until the corn is warm and slightly browned. Add the corn, tofu and rice right before you are ready to serve to the salad bowl with the veggies. Mix with your favorite dressing.
