Serves 3 small portions of 2 large ones

1/3 cup chia seeds

1 cup coconut milk from the nut milk section at the grocery store. Sometimes it's called coconut beverage.

1 tsp vanilla extract

1 tbsp maple syrup or agave

3 brazil nuts

1 small banana


Combine all the ingredients except for the chia seeds in a blender and blend on high until the mixture is smooth

Add the chia seeds to medium size bowl. Pour the liquid mixture on top of the chia seeds. Mix with a spoon, cover and refrigerate over night.

Serve with chopped fruit and a sprinkle of cinnamon
