Last night I was planning on making a beet raw ravioli and a zucchini pesto pasta. Sadly my basil had turned. It was getting late and I decided to see what I could do with what I had. 

I only had to worry about my youngest daughter for dinner that evening. I had already sent my oldest off with a smoothie and leftover spaghetti for dinner to dance. My husband took the Mediterranean Salad with Quinoa & Tofu to work because he had to get my oldest at 9pm and works late those nights. 

Pictured is the meal I gave my youngest daughter. I only ate the salad and the sweet potatoes, but this is a crowd pleaser for sure so I added this version. Transition meats are great when you want comfort food or still have cravings for meat. They are processed so obviously not perfect but a lot better for you than processed chicken tenders.

1 large sweet potato or 2 medium washed and peeled

1-2 tsps of Avocado Oil

4 Gardein 7 Grain Crispy Tenders

hummus- I used store bought 

Preheat an air fryer to 390°. Meanwhile spiralize the sweet potatoes. Add a small amount of avocado oil to the sweet potatoes to just coat. Cook for 8 minutes and shake then cook for 6-8 more minutes. Alternatively if you don't have an air fryer you can make a baked sweet potato or steam it if you want to be super healthy.
