Serves 6 but 4 of us ate all of it.
One bag Trader Joe's Organic Red Lentil Sedanini or other brand
2 very large handfuls or organic spinach
Approx 1/3 cup of the pesto recipe:
1 large bunch or organic fresh basil
1/3 cup olive oil
1/3 cup of pine nuts
1/2 lemon juiced
2 tablespoons nutritional yeast
1 garlic clove
celtic sea salt to taste
Make the pesto. Add all ingredients to a food processor and blend until smooth. Meanwhile boil water in a medium saucepan. Boil the pasta according to the package (approx 5 minutes) drain into a colander when finished. Add the spinach to a serving bowl and while the pasta is still hot, pour the pasta on top to allow the spinach to will. Add about 1/3 of the pesto sauce to the pasta a mix before serving.
Please note, the nutritional yeast gives the pesto a cheesy taste. If you don't have it, you certainly can make this pesto without.
